Candied almonds

 

Ingredients

  • 100ml   Water
  • 200g     Sugar
  • 8g         Vanilla Sugar
  • 1tsp       Cinnamon
  • 200g     Almonds
  1. Heat the water, sugar, vanilla sugar and cinnamon in a pan until the water starts boiling and the sugar dissolves
  2. Add the Almonds and cook over a middle heat until the water evaporates
    1. The sugar will now crystallise and the almonds will be coated with a hard layer of sugar
  3. Continue to heat the almonds while stirring  until the top layer of sugar melts and caramelises
  4. Place the almonds on baking paper, separate with a spoon and leave to set
